Value chain for food from legumes
The aim of the "Gartenmahlzeit" project is to develop and fully establish a new type of regional value chain for plant-based foods for end consumers and the food service industry based on legumes.
Production of regional, plant-based products
The purely plant-based product line made from regionally grown legumes and vegetables is intended to provide end consumers with very tasty convenience foods for the classic evening meal and lunch.
A special feature of the project is the defined maximum distance of 60 km to the target market of "end consumers and restaurants in the city of Leipzig". This means that all components of the value chain:
- Primary agricultural production of legumes, vegetable cultivation, etc.
- Pre-processing of agricultural raw materials (grinding, sorting, cleaning, peeling, etc.)
- Production of prototypes and series production in an artisan butcher's store (use of the machines and processes of meat and sausage production), sustainable packaging solutions
- Logistics of material flows and sales logistics to the end customer (B2C / B2B food retail / gastronomy)
- Market testing, market analysis, customer surveys, customer workshops (B2C and B2B / gastronomy)
take place in this environment.
Individual components of the project are supported by the ESF Plus - MINT-Fachkräfteprogramm in the Free State of Saxony.
